With intensive preparation and fresh ingredients, the distinctive international and exotic dishes all maintain their regional character. Favourites include halibut served with pancetta, Thai asparagus and pommes noisette or Carpaccio of braised oxtail with sautéed shitake mushrooms in 12 year old balsamic vinegar.
